Yes, it's September already but it feels like the dog days of summer are still here. It's hot and humid and the grandkids are asking for chocolate chip cookies!

There is no way I am turning on my oven but there is also no way I am disappointing my little loves.

The solution? No bake cookies with chocolate chips, of course! And the kids can help too! Just stir together a few basic ingredients and voila!

Are no bake cookies safe to eat?

Although they are called “no bake”, I highly recommend that you heat the flour before using it to make this, or any other, no bake recipes. Raw flour has been known to contain bacteria so by heating the flour before using, anything that could potentially cause a problem should be eliminated.

Why is uncooked flour bad for you?

Uncooked flour is bad for you because it typically is not treated in the field to kill bacteria. Therefore, uncooked flour can contain bacteria such as eColi, salmonella and other harmful food borne illnesses.

How do you kill bacteria in flour?

The US Food and Drug Administration recommends heating flour to 160 degrees to get rid of anything harmful.

There are two ways to get rid of the bacteria in flour:

  1. Microwave the flour until it reaches 160 degrees.
  2. Preheat oven to 350 degrees and “toast” or bake the flour for about 5 minutes.

  • It is extremely important to heat your flour before using so that it is safe to eat without baking
  • You can add toffee bits to the cookie dough
  • For a softer cookie dough add an additional 1 Tablespoon of milk to the dough

Instructions

  • In bowl combine butter, brown sugar, granulated sugar, milk and vanilla stirring until sugar has dissolved and mixture is blended and smooth.

  • Sir in flour and salt until a dough forms. If you prefer a softer cookie dough you can add an additional 1 Tablespoon of milk.

  • Stir in mini chips.

  • Using a #60 scooper, or your hands, shape into 24 balls. Chill if you prefer a firmer cookie dough.

  • Drizzle with hot fudge topping, if desired
