If you are like me, you might like cookie dough more than cookies themselves. It’s so hard to resist sneaking a spoonful when I’m baking! Cookie dough just might be the ultimate comfort food.

In the past I’ve shared an edible cookie dough recipe, cookie dough rice krispies treats, cookie dough cake pops and even a cookie dough recipe round up. What I love about this particular recipe is the perfectly portion controlled size and the fact that they are not made with flour or eggs, making them a little safer than the dough that you pop into the oven.

What Ingredients Do I Need?

  • Unsalted butter (salted will also work)
  • Granulated sugar
  • Light brown sugar (dark brown sugar is also fine)
  • Vanilla extract
  • Salt (I use pink Himalayan but any finely ground salt will work)
  • Almond flour or oat flour (make sure it is finely ground)
  • Heavy cream or whole milk (non-dairy milks will also work)
  • Mini chocolate chips
  • Sprinkles

How do I store cookie dough bites?

Store any leftover cookie dough bites in an air-tight container for up to 3 days. Store in the freezer for up to 3 months.

Do these cookie dough bites need to be stored in the refrigerator?

Since these bites contain milk they need to be stored in the fridge. If you prefer to keep them at room temperature replace the milk with water.

I’m allergic to almonds, is there another flour I can use?

You can use oat flour in place of the almond flour.

Can I use regular all-purpose flour in place of the almond flour?

Regular all-purpose flour can contain bacteria that makes it unsafe to eat raw. If you are determined to use regular all-purpose flour make sure you toast it first to kill off any bacteria.

What other substitutions can I make?

This is a very versatile recipe that you can easily adapt to suit your taste! Replace the mini chocolate chips with peanut butter chips, white chocolate chips, raisins, chopped nuts, or anything you like to add to your cookies.

You could also use almond extract or peppermint extract in place of the vanilla extract for a different flavor.

What size cookie scoop did you use?

I used a medium cookie scoop equal to 1 ½ Tablespoons.

Can I freeze these?

Yes! You can leave them spaced out on the baking sheet in the freezer until they are fully frozen. Once they are frozen add them to a freezer-safe container and store in the freezer up to 3 months. Allow them to thaw in the refrigerator when you’re ready to eat. You can take thaw them out all at once or in individual portions for an easy treat!

What makes this cookie dough edible?

Regular unheated flours as well as raw eggs can contain harmful bacteria that can make you sick if eaten raw. Cookies are safe to eat because the ingredients have been baked and the harmful bacteria cooked off.

In this recipe there are no eggs and instead of regular flour it uses almond flour or oat flour. If you have dietary restrictions or concerns, make sure to check with your doctor or dietician to make sure these are safe for your consumption.

Can I bake this cookie dough?

No. To make this cookie dough safe to eat raw there are no eggs in the recipe and there is no baking soda to leaven the dough so they will not turn out if baked.

No Bake Cookie Dough Bites are a quick and easy way to enjoy perfectly portioned servings of cookie dough, made without flour or eggs.

Equipment

  • Cookie Scoop

Ingredients

  • 5 tbsp unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar firmly packed
  • 2 tsp pure vanilla extract
  • 1 1/2 cups finely ground almond flour finely ground oat flour can be used instead
  • 1/4 tsp finely ground salt
  • 4-5 tsp heavy cream or milk
  • 1/3 cup mini chocolate chips
  • 2 tbsp sprinkles optional

Instructions

  • Line a large baking sheet with parchment paper and set aside.

  • In a medium mixing bowl, cream together the butter, granulated sugar, and brown sugar with a hand-held or stand mixer fixed with the paddle attachment.Add the vanilla and mix until well-combined.

  • Mix in the almond flour and salt until well-combined. At this point the dough will be quite crumbly. Stir in the milk until the dough begins to stick together.

  • Gently fold in the chocolate chips and sprinkles if desired.

  • Use a cookie scoop to scoop the dough into evenly sized balls and place on the baking sheet leaving space between each dough ball.

  • Place the cookie dough bites in the freezer for 20 minutes or refrigerate for 1 hour or until set.Enjoy!
