What is a Quiche

A Quiche is a traditional FrenchSavoury Tartmade from two elements:

  • A Filling made from Eggs and Cream Base, and often mixed with other ingredients like vegetables, herbs and/or cheese.
  • A Savoury Pastry Crust, usually Shortcrust Pastry or Puff Pastry. Can sometimes also be crustless!

How do you make a quiche from scratch?

There are SO many ways to make a quiche - whether you want to make it fully from scratch or use pre-made, store-bought elements like the Pastry.

Quiche Pastry

It is completely up to know whether you use a pre-made crust from the store, or make your own. I personally always make my own savoury shortcrust pastry from 4 basic ingredients:

  • Plain Flour
  • Salt
  • Cold Butter
  • Cold Water

Vegetarian Quiche Fillings

The most important ingredients needed to make veggie quiche recipes are obviously the vegetables! With so many options and ingredient combinations to make a healthy quiche, it is time to get creative!

Here are some of my favourite vegetables to use:

  • Cherry Tomatoes
  • Asparagus
  • Mushroom
  • Leek
  • Spinach
  • Zucchini
  • Pumpkin
  • Broccoli

FAQs

Is milk better than heavy cream in quiche? ›

Heavy Cream and Milk – For the best tasting quiche, use a combination of whole milk and heavy cream. (Or simply use half-and-half.) Using just heavy cream produces an overly thick filling. Whole milk is great, but a combo of heavy cream and milk is better.

Should you saute veggies before adding to quiche? ›

Cook the Veggies First

"Vegetables will take longer to cook than your egg custard, so always sauté onions, steam broccoli, etc. before you add them to your egg mixture to ensure every bite of quiche will be perfectly cooked," says Kristin Beringson, executive chef at Henley in Nashville.

What is the formula for quiche? ›

Quiche Ratio: 1 large egg to 1/2 cup of dairy

You'll need to increase the amount of eggs and milk based on the size of your quiche, so knowing the basic ratio makes it really easy to scale up or down. For a standard 9-inch quiche: Use 3 large eggs (6 ounces) 1 1/2 cups of whole milk or cream (12 ounces)

What is a substitute for heavy cream in a quiche recipe? ›

Recommended substitutes: Whole milk, evaporated milk, coconut milk, onion cream.

Why isn't my quiche creamy? ›

Figuring out your proportions couldn't be simpler – for each egg you use, you need half a cup of milk. Too little dairy, and your quiche will be dry instead of creamy. Too much, and it won't set properly.

Should pie crust be prebaked for quiche? ›

You need a par-baked or fully baked crust if you're making quiche, no-bake pie, custard pie, cream pie, pudding pie, or simply want an extra-crisp pie crust. If you're making a pie that doesn't require a baked filling, you still need a baked crust.

How to get the bottom of quiche crispy? ›

Some people like to paint the surface of the pastry base with lightly beaten egg white after the beans have been removed and before returning the dish to the oven as the egg white cooks onto the surface of the pastry and can act as a slight sealant to help to keep the pastry crisp.

Why does my quiche sink when I take it out of the oven? ›

Excess moisture is one reason why quiches collapse in a watery pool on your plate. Vegetables and meats like ham give off tremendous amounts of water when they're cooked. Therefore, if you're using vegetables in your quiche, it's imperative that you cook them first.

Can you mix quiche the night before? ›

Quiche is one of the greatest make-ahead breakfasts I can think of. Meant to be served at room temperature—or even slightly chilled—you not only can make quiche ahead, you have to! That's one of the reasons it's so great for a celebratory morning breakfast.

Can you put raw vegetables in quiche? ›

It is important to cook the veggies first before adding them to the pie shell, as they may add too much moisture to the quiche if added raw, and they may not cook all the way through by the time the eggs are set if you don't cook them first.

What temperature should quiche be cooked at? ›

Bake the quiche for 35 to 40 minutes, until the edge of the crust is brown, and the filling appears set. It may not look completely set in the center... ...but if the center reads at least 160°F on an instant-read thermometer, you're all set. It's all set.

What does Lorraine mean in quiche? ›

Originally, it was a savory pie consisting of an egg and cream custard with bacon or salmon. The French word for cake is "quiche," which might have influenced the name. The dish as we know it today originated in the Lorraine region of France in the 1800s. It consists of eggs and cream or milk in a pastry crust.

Why is the egg filling of my quiche runny? ›

If your quiche appears too watery to serve it could be because it was overbaked or underbaked, the egg to dairy ratio was not correct, the ingredients have too much liquid or it was baked on the wrong rack in the oven.

Is it better to use milk or heavy cream? ›

Full-fat dairy products such as heavy whipping cream contain more of the fat-soluble vitamins A, D, E, and K than low-fat or nonfat dairy. Also, your body absorbs fat-soluble vitamins better when you consume them with fat.

Is milk or heavy cream better for eggs? ›

They recommend half-and-half as the ideal dairy product for producing puffy, stable curds. A combination of milk and heavy cream is a good substitute, as well, while using only milk tends to produce watery scrambled eggs that are prone to "weeping" excess liquid.

Does milk curdle more than cream? ›

Dairy products with higher fat content, such as whipping cream and heavy cream, are less prone to curdling. Restaurants use heavy cream for making sauces and soups because unlike milk, it can be boiled without curdling.

Why is my homemade quiche watery? ›

If your quiche appears too watery to serve it could be because it was overbaked or underbaked, the egg to dairy ratio was not correct, the ingredients have too much liquid or it was baked on the wrong rack in the oven.
